What’s New in Springfield, NE

A big storm swept through the area last Sunday evening around 5:30pm. With winds reported as high as 60mph, this storm wrecked havoc on trees, home, and crops. Springfield area residents were out Sunday night and Monday cleaning up the debris.

Sonshine Preschool is set to begin its second year of operation September 5th. The preschool is housed at the Springfield First United Methodist Church. Teachers, Luann Kulm and Heather Shepard, are gearing up for their Open House, which will be held on Wednesday, August 29th from 6:00 – 7:00. Students and parents are invited to “Blast Off” with a craft project and a snack. One more opening is available for this year. Did you know August 15 is Angel Food Cake Day? Angel Food Cake is a simple sponge type cake. The secret to making this cake is to drop the cake pan on the floor several times before placing in the oven to get out all the air bubbles. Make it without frosting for a fat free dessert. Oh who wants to be good??!! Here is my favorite glaze type frosting for an Angel Food cake:

1/3 cup butter
2 cups powdered sugar
1 ½ teaspoons vanilla or your favorite flavoring (mine is lemon)
2-4 tablespoons hot water

Heat the butter until melted. Stir in the powdered sugar and flavoring. Add hot water on tablespoon at a time until the desired consistency. Glaze your Angel Food cake. Enjoy!
