Calling all Springfieldians!

What if we made a Springfield community cookbook!? If you would like to be included please submit your recipe following the instructions below and I will turn all the information given into a cookbook! I am on a mission to get this created and copies printed before Christmas so that if you wanted to gift one or more to family and friends they are ready by then! How fun to have a book full of recipes from our friends and neighbors! It can be anything from your favorite entree, side dish, dessert, beverage, or appetizer. Feel free to submit more than one as well, thank you! Just think, we will never be in a dinner rut again!

Please also send the number of cookbooks you would like to purchase. Planning to do one bulk order and the more ordered the cheaper it should be. Barbershop Rivalry on Main Street: Springfield’s Early Days

Two barbershops competed for customers on Main Street in the early days of Springfield. Carl
Ahrendson, who operated a barbershop on the north side of Main Street, represented himself as
an early settler who would assist the local men in getting a decent shave and trim. Main Street's
south side was home to Jack the Barber. Despite not being an early local resident, he pledged to
perform a good job shaving a man's face. Although the precise years are unknown, both barbers
operated in Springfield prior to 1900.

Cookie of the Week! 

To spread holiday cheer, we’ll be sharing a different Christmas cookie recipe each week until Christmas. This is also a reminder that the Springfield Memorial Library’s annual Cookie Sale is coming up on December 14, 2024. Stop by to pick up delicious homemade treats and support our library!

Pecan Pie Cookies

Ingredients:

For the Cookie Base:

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1 large egg yolk

1 tsp vanilla extract

1 1/4 cups all-purpose flour

1/4 tsp salt

For the Pecan Filling:

1/2 cup chopped pecans

1/4 cup brown sugar, packed

1/4 cup light corn syrup

1 tbsp unsalted butter, melted

1/2 tsp vanilla extract

Pinch of salt

Directions:

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg yolk and vanilla extract, mixing until well combined.

Add the flour and salt to the wet ingredients, stirring until just combined. The dough will be slightly crumbly but should hold together when pressed.

Scoop out tablespoon-sized portions of dough and roll into balls. Place on the prepared baking sheet, spacing about 2 inches apart. Use your thumb or the back of a spoon to create an indentation in the center of each ball.

In a separate bowl, combine the chopped pecans, brown sugar, corn syrup, melted butter, vanilla extract, and a pinch of salt. Mix well until the filling is sticky and combined.

Spoon a small amount of the pecan filling into each indentation, filling to the top.

Bake for 12-15 minutes, or until the edges of the cookies are lightly golden. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Servings: 18 cookies
