Welcome Back, Springfield!

Countdown to the Holidays!

1 more day until the Turkey Feast!

Monday night was a magical start to the season with Springfield’s Parade of Lights and Tree Lighting down on Main Street. The night was filled with holiday spirit—songs rang out across the crowd, laughter echoed through the streets, and there were cookies and the best hot cocoa everywhere! Springfield truly pulled out all the stops to make it a wonderful event for everyone.

The tree lighting was an experience straight out of a holiday comedy. After the first countdown, the lights stayed dark—cue the Christmas Vacation theme song! But don’t worry, the second countdown worked its magic, and the tree sparkled to life. As Clark Griswold would say: “We're gonna have the hap, hap, happiest Christmas!”

Downtown was aglow with festive energy. The shops are brimming with unique treasures waiting to be discovered, from handmade soaps to beautiful jewelry, there are surprises you won’t find anywhere else. If you haven’t yet, be sure to take a stroll down Main Street. When was the last time you saw a dancing Santa in a window?

And while you're there, stop by the soda fountain. Grab a YUMMY ice cream, soak in the holiday tunes, and let the nostalgia take over.

Springfield has worked so hard to create a season filled with joy, so let’s show our appreciation and share the cheer. As we count down the days to Christmas, remember to shop local, support our community, and savor these magical moments.

Wishing you cookies, cocoa, and lots of holiday magic,

Let’s shop, sip, and stay strong together this holiday season, Springfield!

Calling all Springfieldians!

What if we made a Springfield community cookbook!? If you would like to be included please submit your recipe following the instructions below and I will turn all the information given into a cookbook! I am on a mission to get this created and copies printed before Christmas so that if you wanted to gift one or more to family and friends they are ready by then! How fun to have a book full of recipes from our friends and neighbors! It can be anything from your favorite entree, side dish, dessert, beverage, or appetizer. Feel free to submit more than one as well, thank you! Just think, we will never be in a dinner rut again!

***Please have your recipe typed and sent to This email address is being protected from spambots. You need JavaScript enabled to view it.

Please also send the number of cookbooks you would like to purchase. Planning to do one bulk order and the more ordered the cheaper it should be. Depending how many people order, my guess would be around $20 per cookbook, maybe cheaper, maybe a little more… Wont know a set price until it is made and the orders are in but will keep everyone informed!

Feel free to share with your fellow facebook-less sprinfieldians!

Fit Tip of the Week: Balance the Holiday Treats!

With all this cookie talk, it’s hard not to indulge—and that’s okay! The key is finding balance. Enjoy your favorite holiday treats guilt-free, but pair them with mindful movement and healthy choices throughout the week.

  • Savor, Don’t Overdo: Pick your absolute favorite cookies and enjoy them slowly. Quality over quantity!
  • Stay Active: Take a walk after indulging or fit in a quick workout to keep your energy high and metabolism humming.
  • Hydrate: Drinking water helps keep cravings in check and supports digestion.
  • Share the Love: Bake or buy, but don’t forget to share those cookies with family and friends—it’s the joy of giving! Keeping track helps you stay mindful of your choices without feeling deprived. But remember—this isn’t a list for Santa, so no need to worry about being “naughty or nice.

 It Happened in Springfield

This week, in celebration of Thanksgiving, we provide a recipe for traditional pumpkin pie from
the Springfield Women's Club's 1950 Cook Book. Mrs. Herbert Metzger shared her picture and the pumpkin pie recipe. The cookbook featured advertisements for local businesses, a variety of photographs of Women’s Club members, plus recipes and household tips contributed by
members of the town. Meat, Fish, & Game, Bread, Desserts & Pastries, Cookies & Cakes, Vegetables & Salads, Jellies & Pickles, Candy, and Hints are the sections that make up the cookbook.

This is the way country music started out, with acoustic instruments, before electricity.  People sat out on the lawn, on the porch, or in a friend’s house and played their instruments together.

 Butterscotch Bars

Ingredients:

For the Bars:

  • 1/2 cup (1 stick) butter, at room temperature (plus extra for greasing)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 3/4 cup creamy peanut butter, divided
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup quick-cooking oats
  • 1 cup butterscotch chips

For the Peanut Butter Glaze:

  • 1 cup powdered sugar
  • 4 tablespoons milk
  • 1/4 cup creamy peanut butter

Preparation

Step 1: Preheat Oven

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter.

Step 2: Prepare the Batter

  • Using an electric mixer, cream together the butter, granulated sugar, brown sugar, and 1/2 cup of the peanut butter until light and fluffy.
  • Mix in the egg and vanilla extract until well combined.

Step 3: Mix Dry Ingredients

  • In a separate bowl, sift together the flour, baking soda, and salt. Stir in the oats.

Step 4: Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the butter mixture on low speed until just combined.

Step 5: Add Butterscotch Chips and Bake

  • Spread the batter evenly in the prepared baking dish. Sprinkle butterscotch chips over the top.
  • Bake for 20-25 minutes, or until the edges are golden brown.

Step 6: Make the Glaze and Finish

  • While the bars are baking, whisk together the powdered sugar, milk, and the remaining 1/4 cup peanut butter until smooth.
  • Pour the peanut butter glaze over the warm bars.
  • Let the bars cool completely in the pan before slicing and serving.

Variations

  • Chocolate Twist: Add chocolate chips along with butterscotch chips for a richer flavor.
  • Nutty Addition: Sprinkle chopped peanuts or almonds on top of the glaze for added crunch.

Cooking Note

The bars will continue to set as they cool, so it’s important to allow them to cool completely before cutting to achieve clean slices.
